 Lower carb

  • Artichoke - and hearts

  • Asparagus

  • Bamboo shoots

  • Bok Choy and other Asian greens

  • Broccoli

  • Brussel sprouts

  • Cabbage

  • Carrots

  • Capsicum

  • Cauliflower

  • Celery

  • Courgettes (zucchini)

  • Cucumber

  • Eggplant (aubergine)

  • Green beans

*Note: The carb content of the vegetables does vary, so with some of the lower carb ones like peas for example, when you do have lots of them, the overall carbohydrate in a serving will be higher than the same weight of lettuce for example!
