These peanut and oat snack balls make a great bite-sized, healthy snack between meals. This recipe works well for a snack idea for those requiring a low FODMAP diet.
Ingredients (makes 15 balls)
How to make:
Combine the peanut butter, water, maple syrup and vanilla in a bowl and beat with a wooden spoon.
Add the rolled oats, seeds, and cinnamon and mix well to incorporate everything together.
With clean, wet hands, roll heaped tablespoons of mixture into 15 balls.
Place on a tray lined with baking paper. Cover and chill for at least 15 minutes. Store these in an airtight container or in the fridge.
Tip: To make an oat flour, place rolled oats in a high-speed food processor and blend until the oats resemble a fine dust.
Preparation time: 20 minutes
Chilling time: 15 minutes
