Quick Meal Idea - Mediterranean-style veg + grain salad

Make this your own with the veg and grains you love, or try different veggie combinations we have suggested... 

🫑 1. Roughly chop courgette and capsicum. Stir fry with olive oil in a large pan or wok, seasoned with salt and pepper (do this in a few batches if making a lot) 
🌾 2. Cook rice according to packet instructions (or use quick-cook microwave rice + quinoa blend like I did to save time) 
🥗 3. Toss rice and chickpeas with veg, chopped mint, crumbled feta and dress with lemon juice, olive oil, salt and pepper 
 
Boost up the protein by serving this alongside protein of your choice - chicken, fish, lamb, beef or tofu. 

OPTIONS: 
- Add garlic and/or red onion if you like 
- Try other veggies - eggplant, green beans, leafy greens like baby spinach, avocado, or a yellow capsicum would go well 
- Swap out the chickpeas for cannellini or butter beans 
- Prep ahead of time and refrigerate until needed 
- Use leftovers for lunches
