Perfect for batch-cooking - make a potful and use for leftovers or freezer meals. You can serve this multiple ways... swap the brown rice for quinoa, potato, pasta or grainy bread or for a lower-carb option try cauliflower rice.
🔪 1. Roughly chop onion, garlic, eggplant, capsicum, courgette and cook rice (according to pack directions or use quick-cook microwave rice if short on time)
🧅 2. Sauté onion and garlic in a little olive oil, add eggplant, then capsicum and lastly courgette and thyme - season with salt and pepper
🍅 3. Stir in a can of chopped tomatoes and a can of tomato puree, and heat through
Serve veggies with brown rice and fresh basil, plus a source of protein such as chicken, fish, lamb, beef or tofu.
OPTIONS:
- Boost the veggies - green beans or other colour capsicums would work well
- Prep the veg ahead of time to make it super-quick
