Almond & Coconut Cookies


  • 2½ cups ground almonds/almond flour

  • 1 cup desiccated coconut

  • 1 tsp baking powder

  • 2/3 cup brown sugar

  • 2 large eggs

  • ¼ cup oil

  • 1 tsp vanilla extract

  • Optional: 2-3 drops almond extract

How to make:

  1. Place ground almonds, coconut, baking powder and brown sugar into a large bowl and mix well.

  2. In a second bowl, whisk the eggs for 1 minute then add the remaining ingredients and stir together

  3. Add the wet ingredients to the dry ones and stir together until combined.

  4. If you have time, pop into the fridge if you have time for an hour, if not, you can skip this step.

  5. Place golfball sized spoonful’s of the mixture onto a baking tray and then flattern slightly with a fork or the back of a spoon.

  6. Bake for 8-10minutes at 190 degrees C until lightly golden brown.

  7. Cool on a wire rack, then…enjoy!
