Homemade black bean burgers

Black bean burgers, a great alternative to your usual beef burger if you're wanting to have a meat free day!

Ingredients:

  • 1 can of black beans

  • 1/4 cup of chopped red onion

  • 1/4 cup of chopped fresh coriander

  • 1 tbsp of lime juice

  • 1 tbsp of chopped green or red chillies (or you can use chilli flakes)

  • 1 egg (optional)

  • 3/4 tsp of ground cumin

  • 1 garlic clove, crushed

  • Seasoning

  • 3/4 cup of breadcrumbs made from wholegrain bread

How to make:

  1. Drain and rinse the black beans.

  2. Place the beans along with the rest of the ingredients (apart from the breadcrumbs) into a food processor and blitz for 1 minute, or until the puree is thick.

  3. Add 1/4 cup of the breadcrumbs into the puree and mix with a wooden spoon.

  4. Use the puree and shape a patty in your hand.

  5. Sprinkle 1/2 cup of breadcrumbs onto a plate and coat the patties with the breadcrumbs (refrigerate for an hour or so).

  6. Preheat the oven to 210°c and line an oven tray with baking paper.

  7. Place the patties onto the oven tray and bake for 5-10 minutes on each side (keep a close eye on the patties).

  8. Serve in a bun, or on lettuce and with your favourite vegetables.
