Nutrition Boost Bread: A High-Protein, High-Fibre Delight

This high-protein, high-fibre bread made with cottage cheese has become a social media favourite - and for good reason. It's simple to make, packed with nutrients, and has a great flavour. Whether you're looking for a healthy snack or a satisfying breakfast or lunch option, this bread has you covered! 

 

Ingredients:

  • 2 cups rolled oats 

  • 250g cottage cheese 

  • 2 eggs (or egg substitute if preferred) 

  • ½ cup seeds of your choice (sunflower seeds work great!) 

  • 2 tablespoons psyllium husk 

  • ¼ cup chia seeds 

  • 2 tablespoons baking powder 

 

How to make:

  1. Preheat oven to 180°C (350°F)

  2. In a large bowl, mix all the ingredients together until well combined

  3. Shape the mixture into a loaf and place it on a baking tray or in a loaf tin

  4. Bake for 40-45 minutes, or until golden brown and cooked through

  5. Allow the loaf to cool completely before slicing

Option: For a smoother texture, you can whizz up the oats and seeds slightly before mixing with the other ingredients.
