Oat cookie bites

Try these delicious Oat Cookie Bites for your next snack and I'm sure they will impress your guests!

Ingredients:

  • 1 cup rolled oats

  • ½ cup desiccated coconut

  • 4 squares dark 70% dark chocolate or 3 tbsp cacao nibs (optional)

  • 2 tbsp tahini or nut butter

  • 2 tbsp maple syrup

  • 1 tsp cinnamon

  • 2 tsp vanilla extract

  • 2-3 tbsp water (enough until the balls become sticky and doughy)

How to make:

  1. Place all the ingredients into a food processor and pulse together, adding the water slowly until dough reaches a chunky consistency.

  2. Roll into balls and pop into the fridge for 30mins or freezer for 15mins to chill and set.
