Quick Meal Idea - Mexican-style tofu salad bowl with corn chips or rice

Serve this delicious Mexican-inspired tofu salad bowl with your choice or corn chips, rice, or another grain. Swap out the salad ingredients for what is in season or growing in your garden.

👩‍🍳 1. Stir fry cubes of drained/dried firm tofu in olive oil, seasoned with cumin, ground coriander, salt and pepper 
 
🌾 2. Cook rice (unless using corn chips) according to packet instructions (or use quick-cook microwave rice to save time) 
 
🥗 3. Serve tofu with veggies such as baby spinach, corn, tomatoes, canned black beans, avocado, and rice or corn chips 


OPTIONS: 
- Drizzle over olive oil and a squeeze of fresh lemon or lime juice, or a few teaspoons of mayo 
- Add some fresh chilli or chilli flakes if you like a bit of heat 
- Boost/swap veggies - capsicums of all colours would be great here 
- Definitely add some fresh coriander if you have some available - yum!
