Raspberry & coconut popsicles

Popsicles are a great idea to cool you down over a summer's day or prep these ready for when the sun decides to shine where you are. 


  • 1 cup frozen raspberries

  • 1/2 cup Greek yoghurt

  • 1 1/2 tbsp coconut milk or desiccated coconut

  • 2 tsp honey or maple syrup (optional)

How to make:

I whizzed this up in my blender, and made 3 popsicles, so multiply the ingredients depending on how many you want to make.  Put your mixture into any type of popsicle containers.

If you added a frozen banana to this mix it would easily make 4 popsicles.

This recipe works best with coconut milk,  but if you don't want to open a whole can, then you can use desiccated coconut.
