Ricotta Pear Toast

This is a fabulous light option for brunch while pears are in season. A healthy combination of fruit, nuts and calcium-rich ricotta, this is a satisfying, fibre-rich meal that has natural sweetness of pears and honey.

Ingredients (serves 1)

  • 1 or 2 slices of bread (sourdough, wholegrain seedy bread or another high-fibre bread you enjoy)

  • ¼ cup ricotta cheese (mix in a small pinch of cinnamon for flavour if you like)

  • 1 tablespoon chopped nuts - pistachios or walnuts work well

  • 1 pear, thinly sliced

  • 1 tsp honey or maple syrup

How to make

Spread ricotta cheese over toasted bread slices, layer with pear slices, sprinkle with nuts, drizzle with honey and serve!
