Ricotta Pear Toast Topping

This is a fabulous light option for an Easter brunch if you’ve already overdone the chocolate bunnies! A healthy combination of fruit, nuts and calcium-rich ricotta, this is a satisfying, fruit filled meal that has natural sweetness of pears and honey.


Ingredients (serves 1)

    • 1 slice of bread (this can be sourdough, ciabatta, raisin bread or any other bread you particularly fancy)
    • ¼ cup ricotta cheese (mix in a small pinch of cinnamon for an Easter flavour if you fancy)
    • 1 tablespoon chopped nuts, pistachios work well!
    • 1 small pear, thinly sliced
    • 1 tsp honey or maple syrup if you prefer


How to make:

  1. Toast the bread slice.

  2. Spread the ricotta cheese over the toast. Sprinkle with pistachios and then layer with pear slices. Drizzle with honey and serve.
