Tomato and basil salad

This is a fresh delicious summer salad which is super easy to make, colourful and tastes delicious!

Ingredients: Serves 4 as a side

  • 4 – 6 large ripe tomatoes

  • 1 medium cucumber peeled

  • 50g reduced fat feta cheese

  • Handful of basil leaves


  • 4 tbsp balsamic vinegar

  • 1 tbsp extra virgin olive oil

  • Black pepper

How to make:

  1. Slice the tomatoes and cucumber – layer them up on a plate or into a bowl

  2. Crumble over the feta cheese (or you can use a few slices of mozzarella instead)

  3. Tear up the basil leaves and sprinkle over (tearing is better than slicing as it will release more flavour)

  4. Place the dressing ingredients into a jam jar, shake and pour over

  5. Eat and enjoy! 

Adapt it: You can also use parsley or coriander if you like. If you don’t have any herbs at hand, you can still make this without them. Just add more black pepper and maybe a few slices of avocado too. Thinly sliced red onion is also a great addition to this salad!
