A classic version of this summery, popular dip!
½ large cucumber peeled and grated
1 ½ cups unsweetened Greek yogurt
1 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh mint and/or dill
Juice of ½ lemon (approx. 1 tbsp)
1 clove garlic, very finely chopped or pressed
Salt and black pepper
How to make:
Firstly, remove the excess liquid from the grated cucumber. Either squeeze it in a clear teatowel, squeeze over a sieve with your hands or put into a few sheets of paper towel and squeeze the liquid out that way.
Place the yogurt, olive oil, herbs, lemon juice, garlic into a bowl and add the grated cucumber, stir and season to taste. Add more herbs or lemon if needed.
Serve tzatziki straight away or chill if you need it later on.
