Carrot cake overnight oats

Here’s a new idea to try for breakfast or snacks, it’s so yummy!!!

 Ingredients: (makes 3-4 servings)

  • 1 cup rolled oats

  • 1 cup milk

  • 1/2 cup yoghurt of choice

  • 3 tbsp chia seeds

  • 2 tbsp desiccated coconut (optional)

  • ¾ cup grated carrot

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • 2 tbsp raisins/sultanas

  • 2 tbsp chopped walnuts

  • 1 tsp vanilla extract

  • 1-2 tsp honey or maple syrup (optional)

How to make:

Mix it all together in a jar, leave for 6 hours or overnight and…enjoy!
