Claire's Anzac Biscuits

Check out this delicious Anzac biscuit recipe with a healthier twist!

These biscuits are lower in sugar and have less saturated fat than a normal Anzac biscuit, plus they can easily be made without flour if you prefer.


Makes 15 biscuits


Ingredients:

  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 1/2 cup high grade flour or ground almonds
  • 1/3 cup golden syrup
  • ½ cup of oil
  • 1/3 cup brown sugar
  • 1 rounded tsp bicarbonate soda
  • 2 tbsp boiling water


Adapt it: If you like the buttery taste of Anzac biscuits, you can use ¼ cup oil and ¼ cup of butter


How to make:

  1. Pre heat your oven to 180 degrees

  2. Place the oats, coconut, flour or ground almonds into a bowl

  3. Put the golden syrup, sugar and oil (and butter if using) into a saucepan and gently heat until combined then pour over the oat mixture

  4. Mix the bicarbonate soda and boiling water together in a small bowl and add to the bowl with the oat mixture

  5. Mix together until all the ingredients are combined

  6. Take spoonful's of the mixture and roll into a ball, place onto a lined baking tray and flatten slightly

  7. Bake for approximately 10 minutes or until golden brown
