A delicious salad ideal for a light lunch or served with meat, chicken or fish for dinner.
Ingredients:
Dressing
How to make:
Lay your spinach leaves in a bowl, top with beetroot, spring onion, feta, walnuts.
Mix all the ingredients for the dressing, add to the salad and it's ready to serve.
Top Tip: You can either cook raw beetroot yourself or used pre-cooked beetroot which you can get in the fruit and veggie section of the supermarket or a third option use canned baby beets. Add some chickpeas for some protein.
