An easy way to keep salads interesting over summer is to mix up your dressings!
Dressings are easy enough to make yourself, often with ingredients that you likely already have in your pantry or fridge! This is one of my absolute favourites. I love creating a healthy chicken salad for lunch, with this mango yoghurt dressing to add delicious flavour.
Here’s how it’s done:
1 bunch of fresh coriander
Juice of 1 lemon
1/2 cup natural yoghurt
2 tablespoon raw cashew nuts
1 heaped tablespoon mango chutney
Pinch of turmeric
Blend the ingredients together using the amazing Kenwood Tri-blade to do this. Blitz until blended well. Pour over salad ingredients and chicken.
