Mexican Fiesta Bowl

Love Mexican? You will love this! A quick, easy and healthy meal ready in minutes - all you need is 3 cans! 

Ingredients:

  • 1 can chopped tomatoes
  • 1 can black beans or kidney beans, drained and rinsed
  • 1 can corn, drained and rinsed (frozen corn is fine too)
  • 1 red onion, finely sliced
  • 1 tbsp olive oil
  • Optional: chili flakes, Mexican spice mix

How to make:

  1. Heat the oil in a non-stick pan, fry the onion gently along with the chili flakes or Mexican spice mix until the onions are soft

  2. Add the tomatoes, beans and corn, heat through

  3. Serve with rice

Optional extras to serve: Shredded lettuce, grated cheese, sour cream, avocado
