Mixed Veg Mash

Looking for a lighter mash that is lower in carbs, but packed full of flavour? Try this mixed veggie mash.

It has half the calories and half the carbs per serve when compared with mashed potato but equally delicious!

Serves 4-6


Ingredients:

  • 3 large potatoes, peeled
  • ½ large cauliflower
  • 2 large carrots, peeled
  • ¼ cup sour cream (or 4 tbsp milk)
  • Seasoning

How to make:

1)  Firstly, prep the vegetables. Chop the potatoes in half, chop the cauliflower into 4 pieces and each carrot into 4-6 chunks.

2)  Pop the vegetables into a pan and cover with boiling water, cook over a medium heat on the stove for around 30 minutes or until all the vegetables are tender.

3)  Drain the vegetables and add the sour cream or milk and mash together using the mashing attachment on the Kenwood Triblade hand blender. Season to taste.
