Oaty Banana Pancakes

A super quick recipe without flour or added sugar. These pancakes make an easy breakfast or anytime snack. 

Ingredients:

  • 2 ripe bananas
  • 2 eggs
  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • Oil for cooking

How to make: 

The super speedy way:

  1. Blitz the ingredients together.
  2. Heat 1 tbsp of oil in a non-stick pan and add a spoonful of mixture to the pan. 
  3. Cook for 2-3 minutes until you start to see bubbles releasing from the top of the batter. Flip and cook until the other side is golden brown, about 1-2 minutes. 

By hand: 

  1. Mash the bananas and place them into a large jug or mixing bowl.
  2. Beat the eggs. Add to the mashed banana. 
  3. Add the oats, chia seeds and vanilla extract, stir to combine. 
  4. Heat 1 tbsp of oil in a non-stick pan and add spoonfuls of the mixture to the pan. 
  5. Cook for 2-3 minutes until you start to see bubbles releasing from the top of the batter. Flip and cook until the other side is golden brown, about 1-2 minutes.

Top the pancakes with whatever toppings you like. Yoghurt and berries works well!
