A super quick recipe without flour or added sugar. These pancakes make an easy breakfast or anytime snack.

How to make:
The super speedy way:
Blitz the ingredients together (I use the Blend Xtract attachment on my Kenwood Chef for this)
Heat 1 tbsp of oil in a non-stick pan and add spoonful’s of the mixture to the pan.
Cook for about 2-3 minutes until you start to see bubbles releasing from the top of the batter. Flip and cook until the other side is golden brown, about 1-2 minutes.
By hand:
Mash the bananas and place into a large jug or mixing bowl
Beat the eggs, then add to the mashed bananas
Add the oats, chia seeds and vanilla extract, stir to combine
Heat 1 tbsp of oil in a non-stick pan and add spoonful’s of the mixture to the pan
Cook for about 2-3 minutes until you start to see bubbles releasing from the top of the batter. Flip and cook until the other side is golden brown, about 1-2 minutes
Top the pancakes with whatever you like. Yoghurt and berries works well!
