Oaty Banana Pancakes

A super quick recipe without flour or added sugar. These pancakes make an easy breakfast or anytime snack. 

Ingredients

  • 1 ½ cups rolled oats

  • 1 tbsp chia seeds

  • 1 ripe banana

  • 1 egg

  • 1 tsp baking powder

  • 125g greek or thick natural yoghurt

  • 1/4 cup milk

  • Oil for cooking

How to make:

Blend rolled oats in food processor, to make a flour.

Add, chia seeds, banana, egg, yoghurt, milk and baking powder, blitz together to form the pancake batter.

Over a medium heat, add 1 tbsp of oil in a non-stick pan and add spoonfuls of the mixture to the pan.

Cook for about 2-3 minutes until you start to see bubbles appearing on the top of the batter.

Flip and cook until the other side is golden brown, about 1-2 minutes.

Top the pancakes with whatever toppings you like. Yoghurt and berries works well!
