Salmon, Pea & Avocado Squash

I love the fresh vibrant green in this beautiful combination of peas and avocado.

Best of all, it’s simple & tasty and you can choose your carbohydrate base according to how hungry you feel.

Wholegrain toast or rye bread for a more filling lunch meal or grainy & seedy crispbreads for something lighter and more ‘snacky’.

 

Ingredients:

  • 3-4 slices of smoked salmon
  • 1/2 cup peas
  • 1 avocado
  • Squeeze of lemon or lime
  • 2 tbsp red onion (sliced thinly)
  • 1/4 cup parsley or herb of your choice (chopped)
  • 1 clove of crushed garlic
  • 3 tbsp water
  • 1/2 tsp olive oil
  • salt & pepper to taste (smoked salmon is quite salty)
  • slices of wholegrain or rye bread (toasted optional) or grainy/seedy crispbread

 

How to make:

  1. Use 1/2 cup of frozen peas (defrost by covering with hot water in a bowl and drain).
  2. Mix red onion, lemon juice, garlic, oil and salt/pepper into the bowl of peas and mix - if you want more of a 'smashed' consistency use a fork.  Add sliced or cubed avocado (mash together further if desired but leave some chunks still remaining).  Stir through herbs.

  3. Serve on whole grain or rye bread (toasting optional), or grainy seedy crackers.

  4. Top with slices of smoked salmon and serve!
