Vegan Chocolate Mousse

Thick and creamy chocolate mousse made with a surprising ingredient, aquafaba which is......the liquid you normally just throw away when you drain a can of chickpeas or other pulses.  You HAVE to try this one, it is a bit like magic and flipping delicious. No chickpea taste we promise 😉

Ingredients:

  • 1 cup of aquafaba 
  • 250g good quality dark chocolate

How to make:

  1. Melt the chocolate in a heat-proof bowl above simmering water. Set aside and allow to cool.

  2. Whip the aquafaba until it forms stiff peaks. We use our Kenwood Chef for this as it makes life MUCH easier as it can take a good 10 or so minutes!

  3. Fold the melted chocolate (when it has cooled slightly) into the whipped aquafaba. We use the folding attachment on our Kenwood Chef.

  4. Spoon the mousse into ramekins, glasses or whatever bowls you are serving in and then chill for an hour, longer if you can.
