Homemade granola

Ingredients:

  • 8 cups oats (I used 3 cups wholegrain oats which are chunkier and 5 cups of rolled oats)

  • 1 cup sunflower seeds

  • ½ cup sesame seeds

  • ½ cup flaxseed

  • ½ cup pumpkin seeds

  • 1½ cups of coconut thread

  • ¾ cup of dates, chopped

  • ¾ cup of dried figs, chopped

  • ½ cup dried cranberries or sultanas

  • ¼ cup oil (optional, you can make without)

  • ¾ cup of honey

How to make:

Pre heat your oven to 150 degrees C

  1. Pour the oats into a large oven tray along with all the seeds.

  2. Warm the honey until liquid and mix with the oil, pour over the oats and seeds and stir through until they are all lightly coated.

  3. On a separate tray, place the coconut threads and chopped figs. I like to dry the figs out every slightly so they don’t stick to everything else in the granola, but you don’t have to do this step. Likewise, I like to toast the coconut, but you could equally add it in during step 1.

  4. Pop both trays into the oven for around 10 minutes, then remove the coconut and figs (they don’t need to go back in the oven again), stir the oats/seeds and then put back into the oven for another 10 minutes, remove and stir again, then pop back into the oven. I repeat this every 10 minutes for about 4-5 cycles until the oaty mixture starts to go golden brown. Repeat until you get the colour you like!

  5. Remove the oat and seed mixture from the oven and allow to cool, then add the coconut and figs along with the other dried fruit and there you have it!

 You can use any combination of nuts, seeds or dried fruit that you like!
