Power Oat Pancake

Try this delicious, nutritious, power packed pancake for your next breakfast!  Just one of the fabulous recipes by our Registered Dietitian Sara Widdowson.

 

Ingredients: (serves 1) 

  • 1 egg, whisked  
  • 2 Tbsp rolled oats 
  • 2 Tbsp oat bran  
  • 2 Tbsp low fat plain yoghurt 

 

How to make:

1) Mix all ingredients together in a bowl.  

2) Pour into heated non-stick pan.  

3) Cook until bubbles appear on the surface then turn over carefully.  

4) Cook the other side for around one minute then transfer to a plate.  

5) Add desired toppings.  

  

Topping Suggestions:  

  • Blueberries (1/2 cup defrosted in the microwave)  
  • Plain yoghurt  
  • Kiwi fruit slices  
  • 2 Tbsp seeds such as sunflower and pumpkin seeds  
  • 1 tsp cinnamon
