Cheap, cheerful & delicious!
How to make:
1) Fry onion, carrot, courgette in a little oil until soft
2) Add spice mix/chilli
3) Add tomatoes and beans
4) Cook for 20mins, add splash of water if needed.
Serve with rice and then toppings of your choice - maybe cheese, avocado or tomato salsa or a light sour cream?
High fibre, low cost....winner!
Adapt to add any veg that you have in! No courgette, add more carrot and corn/peas.
